Vineyard

A selection of low-yielding old vines (40 years old) from un-irrigated land. These blocks are situated in our estate "Las Gruesas", 800 metres above sea level, with a stony-limy soil.

Wine Making

This grapes are harvested into boxes of 18 Kg. Grapes are first selected in the vineyard followed by a second selection made in the winery. After soft de-stemming, a traditional wine making techniques are used. This involves a long maceration period of 40 days, light pump-over and fermentation at a controlled temperature of 25º-26ºC. A slight pneumatic pressing then follows, prior to ageing the wine in new French and American oak for 13 months.


Tasting Notes

The wine has an intense cherry red colouration of medium to high density. The nose is very complex, with powerful balsamic, red fruits, wood and smokey, toasty aromas. The palate is full-bodied, dense, well structure, well balanced and of good length, with a velvety finish. The flavours are of intense morello cherries, with a balance of sweetness and rounded tannins.

Serving Suggestions:
This complex wine matches very well with any game dish, like stewed partridges for instance. Young lamb is also an excellent option as is Segovian suckling pig.
