D.O. Calatayud Grapes: 100% Garnacha Climate / Soil Type: Continental climate (dry summers and cold winters). Chalky and stony soil. Mountainous area with altitudes from 800 to 1100 m. Vineyard: Vineyards between 60-80 years old in gobelet training system with natural drainage and an average yield of 2400 kg/h. Fermentation: In stainless steel tanks for 20 to 25 days at a temperature of 24 º C with skins. Premaceration for 10 days and posmaceration of 21 days with skins. Microxigenation before the malolactic fermentation. Maturation Process / Time: After malolactic fermentation stays in barrels. Ageing: 10 months (60% american barrel – 40% french barrel). Storage / Serving temperature: 4 years / 18º C Tasting notes: Opaque purple colour. Fruits of the forest and mineral bouquets. It has a splendid perfume of spices, lavender, kirsch and blueberry.
