Pizzini Il Soffio
Il Soffio loosely translates from the Italian to “bubble”. Grape Variety: 100% Sangiovese Wine Making This non vintage sparkling rosé has been made using the ‘saignee’ method from Sangiovese fruit that was hand picked, crushed and left to macerate for 8 – 9 hours. A percentage of the juice was bled off; this juice was then slowly cooled and fermented at thirteen degrees Celsius so as to retain fruit aromatics and crispness. It is an elegant, fragrant wine displaying cherry, earthy, savoury and tropical notes. The lush palate shows herbs and sour cherries, the wine finishes with soft tannins and a gentle creamy fizz.
