Grape Variety: 100% Pinot Grigio Region: King Valley - Victoria The Wine The colour is a pale straw with green olive hues. The nose has lifted notes of white petal flowers and wafts of pears and green apples, sweet cinnamon, with some lovely herbaceous overtones. The palate is crunchy, fresh and crisp. There is lots of flavour, soft pears, white stone fruits, and granny smith apples. The palate is long with lovely structure and concentration.

Vinification The Pinot Grigio was harvested at four different stages at a combination of ripeness levels so as to build complexity of flavours in the resultant wine. The juice was drained from the skins right away after pressing so as not to pick up any colour from the pink/bronze coloured berries. The juice was then left to settle for 24 hours before racking and fermentation. A yeast strain was used to ensure maximum extraction of varietal characters while fermentation temperatures were kept low to capture freshness and aromatics.
