Paringa Estate Winery was established at Red Hill on Victorias Mornington Peninsula by owners Lindsay and Margaret McCall in 1985. It has established itself over the past 15 years as one of the leading quality small producers in Australia. Wine Making |The winemaking process for this wine was almost identical to that of the Paringa premium Estate Chardonnay, with fruit sourced from the winery’s Callanan’s Road Vineyard and Sea Vista Vineyard in Paringa Road. The fruit was crushed and de-stemmed, gently airbag pressed and the 100% barrel fermented in seasoned French Oak barriques. Approximately 20% of his wine was wild yeast fermented. Tasting Notes The bouquet of this wine is fruit driven with citrus and stone fruit characteristics, nectarine and peach in particular. The palate has similar tropical and stone fruit flavours combined with subtle nutty barrel ferment characters, and good acidity. This is a lovely fresh wine that will provide excellent current drinking but will reward 2 to 3 years cellaring.
