Tasting Notes

Rich, ripe blend with the 40% Merlot softening out the back palate grip of the Cabernet Sauvignon. A powerful, deep, aroma varying from red berry fruits to black cherries and leads into a sweet, full bodied, intense, richly flavoured palate. Sourced from vineyards owned by the Veritas winery along the western side of the Barossa Valley.

Vinification

The Cabernet Sauvignon Merlot is fermented in open fermenters. Selected Bordeaux style yeasts are added. The juice is pumped over twice daily resulting in maximum flavour, colour and tannin extraction with both the warm ferment and pumping over stabilising tannin structure. The Merlot was aged in shaven and three year old American oak. The Cabernet Sauvignon was matured in 15% New French oak, with the balance being three year old French oak. The wine was matured for 10 months. The Cabernet Sauvignon Merlot was bottled March 06.

Winemakers Comments

“A Cabernet made with a Shiraz mentality, easy to drink. A gentle wine on the palate that is backed up by full ripe fruit flavours of blackberry, cassis, plums and subtle oak. The tannins are soft and gentle and combine with the fruit to enhance the overall flavour of the wine resulting in a well balanced silky, smooth wine with all the components coming together in harmony” Rolf Binder

The 2000 vintage was characterised by a lack of rainfall throughout the year, which affected the progress of the growth cycle, delaying the ripening of the grapes. An unusually dry autumn and winter (with a total of 133 l/m2) was followed by a spring without excessive rain (105 l/m2). Only some storms in July eased a little the extremely dry weather conditions. The cold temperatures in winter and at the beginning of spring put back the budbreak of the vines. No incidents worthy of mention in the vineyard during the cycle.
The quality of the harvest was excellent in the vineyards with moderate yields and irregular in those areas where the crop was very abundant.

Aroma of sun-dried, prune-like fruit and, to a lesser degree, a fragrance of oakiness.
Deep red colour which shades from the dark hues of the bulb of the glass to brick red around the edge.
Smooth sensations fill the mouth, leaving behind a touch of caramel on the soft palate. Smooth on the tip of the tongue and toasted underneath.
