2006 Vintage
D. O. Calificada Rioja Varieties: Tempranillo (100%) from vines older than 30 years.
Tasting Notes: Deep purple/black in color, offering a bouquet of coffee, pencil lead, spice box, and black fruits. Complex, velvety, layered and plush on the palate, this wine is ripe, savory, and exceptionally concentrated.
Fermentation: Traditional elaboration, 100% destemmed. Temperature controlled fermentation with selected yeast between 28 and 30º C
Maceration: Pre-fermentative cold soak for 48 hours and maceration on the skins for 21 days. Energetic pump-overs twice per day until the end of fermentation. During the maceration, the frequency of the pump-overs is reduced to avoid the extraction of vegetal and bitter characters.
Malolactic Fermentation: In barrel
Aging: 12 months in Bordelaise barrels of French oak (80%) and American oak (20%) since November 2006. Racked every four months. Bottled: unfiltered December 2008.
Reccomended Pairings: Red meats, roasts, stews and all types of game, cured cheeses and foie.
