Region: Penedès

Varieties: 40% Xarel·lo, 40% Macabeo, 20% Paellada

Tasting notes: Colour: Straw yellow with golden hues. In the glass it is a clear,
brilliant cava with rosaries of fine bubbles forming a persistent crown on the surface.
Aroma: Aromas of ageing, with notes of yeast and a touch of honey. Taste: With a broad, firm palate, the notes of mature fruit are offset by a balanced acidity.

Gastronomy: Splendid as an appetiser or for accompanying delicate dishes such
as oysters, shellfish or fish dishes.

Viticulture: The vineyards, with an average age of 15 years, are in the Lower Penedès and Upper Penedès regions, at an average altitude of 340 metres above sea level. The soils are deep with medium water retention capacity and slightly chalky. With a planting density of between 2,200 and 2,500 vines/Ha, the vegetation is conducted on espalier with a Royat type trimming system or in a traditional basin. The production is around 10,000 kg/Ha and the harvesting is done completely manually.


Preparations: Having collected each variety separately, the grape is de-stemmed and the pulp is cooled to 14º C to continue with pneumatic pressing to 0.2 bar. The flower must is then separated 55%, and static silting is performed. The fermentation takes place in stainless steel tanks at a controlled temperature of between 16 and 18º C. Having performed careful coupage of the three varieties, a gentle clarification is made, and the tartar stabilisation and final filtering processes are carried out. The second fermentation takes place in the bottle following the traditional method, and the minimum ageing is 24 months.
