Vin de Pays Grapes 100 % Cinsault (from over 100 year old vines)
Vineyard Named after the wild civet cat or lynx now extinct in the area, LES SERVIERES is made from Cinsault (oeuillade) grapes. The vines, planted over a century ago in 1900, face south-east and grow on hillside terraces where their roots plunge deep into the hard marl and clay/limestone soil. Its depth and pronounced fruit are the result of a joint effort between the owner, my childhood friend, Alain Robert, who loves everything that has to do with nature, and me, a vigneron, completely won over by the extraordinary character of the vineyard situated only 10 kms from Montpeyroux. Vinification Maceration for 20 days with lees circulation. Aged for 9 months in small casks. Tasting Notes The nose is dominated by sharp red fruit such as redcurrants or small black cherries. In the mouth, its soft tannins lead to a fresh, clean exceedingly attractive finish. Serving Suggestions This wine is particularly good with quails prepared with cherries, pot au feu, chicken with tarragon - or even as an aperitif.
