Vin De Pays De Mont Baudille Grapes Carignan 100% Vineyard Grown on hilly terraces formed from limestone/clay. The soil changes with the slopes: limestone scree, dating from the end of the Jurassic era, alternating with rock hard Lower Miocene Blue Marl containing tertiary marine fossil deposits Vinification Long maceration of 28 days with frequent lees circulation. Aged in small casks for 18 months. Tasting Notes Reminiscent of black fruit, with a touch of liquorice and slightly smoky, this is a powerful wine though it always finishes on a clean note. "Le Carignan" is just that, from over 60-year old vines whose grapes are picked very ripe and with low yields. Often a touch rustic when young, its powerful, slightly smoky and with aromas of black fruit and liquorice. As it ages it becomes more complex. It vinifies for 28 days with regular circulation, and matures in casks for 18 months. It is truly a symbol of the essence of the region and its history. Serving Suggestion Splendid with partridge cooked with chanterelle mushrooms, it also delightful with spicy Japanese dishes and Spanish jamon. Ratings: 90 Points Wine Advocate
