Grape Variety: Tempranillo 100% (A.k.a. Tinto Fino, Tinto del país)

Vintage

Winter was fairly dry and cold towards the end of April, delaying the bud breaking due to a weak development in the early stages. During the first days of May, there are light frosts, which decreases the production, especially in the white varieties. At the end of May and June, showers and storms dominate the area, which brings sufficient humidity for the development of the vegetative cycle. July is dry with ideal temperatures. August is also dry with mild temperatures and cold temperatures at night, which provokes a delay in the veraison and the start of the ripeness. September brings dry and sunny weather; temperatures are higher than normal provoking a physiological ripeness, which increases the sugar content of the berry. The physiological ripeness slows down by the end of October with a slight delay. At the time of harvesting, we have healthy grapes with high levels of sugar content and a low polifenolic index compared to normal years.

Wine Making

The grapes for this wine are harvested from controlled old vineyards, with anaverage yield of 40 Hl/Ha. Fermentation is carried out at a controlled temperature of 28ºC to 30ºC with selected yeast (Saccharomyces bayanus), during which there are eight days of maceration, with 2 daily pump-overs. The wine undergoes a further 15 days of maceration following fermentation, followed by gentle extraction, with one light pump-over daily. The wine is then cold stabilized.

Tasting Notes

Color: Ruby red with violet hues, clean and very brilliant.
Aroma: Fruity, raspberry, red fruits; very characteristic of the variety. Light notes of vanilla and spice.
In mouth: medium-bodied, good equilibrium of tannins and acidity. Finishing with notes of raspberry, vanilla and light notes of wood.


Serving Suggestions: Appetizers, rice and pastas, grilled meats. Meals not highly seasoned.


Serving Temperature: 15ºC (59ºF).

Cellaring: Consume before December 2009.
