Grape Variety: 100% Chardonnay Region: Mornington Peninsula Paringa Estate Winery Paringa Estate Winery was established at Red Hill on Victorias Mornington Peninsula by owners Lindsay and Margaret McCall in 1985. It has established itself over the past 15 years as one of the leading quality small producers in Australia. Wine Making The Chardonnay winemaking process involved fruit being crushed, de-stemmed and gently airbag pressed to obtain the highest quality free-run juice which was barrel fermented in new and one year old Vosges and Allier French Oak barriques. Approximately 15% of this wine has been wild yeast fermented and also underwent malolactic fermentation. Tasting Notes The bouquet and palate of this wine displays citrus and stone fruit, nectarine and peach, along with the creamy nutty characteristics introduced by barrel fermentation. The mouth feel is long and rich and finishes with subtle malolactic caramel/butterscotch flavours.
