Veritas Winery was established in 1955 by Rolf Heinrich Binder. The winery tradition is now continued by Rolf and Christa, as brother and sister winemakers, jointly awarded Barossa Winemakers of the year 2005. In 2005, on their 50th Anniversary, Veritas became Rolf Binder Wines. The philosophy of all Rolf Binder Wines is to let the vineyard tell its own story.
Tasting Notes A collection of five Barossa Valley Shiraz vineyards contribute varying characteristics of fruit to this wine. To this we have added some Shiraz base from our winery stalwarts, the Christa Rolf and the Heinrich. The Shiraz makes up only 90% of the final blend, with juicy confectionary and red cherries hailing from 5% Grenache, and 5% estate-grown Mataro offering a deep, earthy background on the palate. Twelve months maturation in a mixture of 10% new American oak barrels, the balance being made up of two-year old American and shaved French barrels.
Vinification Grapes for the Rolf Binder Shiraz are crushed, then immediately inoculated with selected Rhone yeasts. Fermentation involves twice daily pump overs. After time on skins the lots are racked, returned and the juice pumped back over the skins thus breaking them up. The pressings juice is returned to the free run. Post fermentation the wines are racked twice to remove the lees, then transferred to oak vessels, 10% New American, the rest shaven French and American, for maturation for 11 months. The Shiraz was bottled and released in March 2010. Rolf Binder Shiraz is a classic, opulent Shiraz with fine lingering tannins.
Winemakers Comment “A wine released domestically for the first time after a few vintages heading overseas. Generally from maturing vineyards the wine is made to show that the Barossa excels at making a style that is very well flavoured, with strong characters and texture but can be drunk in its youth and greatly enjoyed. A full flavoured drink now style with good fruit, body and balance.” Rolf Binder.
