Wine Making The wine is made from a thorough selection of Monastell grapes from low-yielding old vines. A traditional method of vinification is used, with soft pump-over, fermentation at a controlled temperature of 25ºC/26ºC, with 8 to 10 days maceration and pneumatic pressing, racking and then ripening in stainless steel tanks and American oak casks. Tasting Notes The wine is bright, with cherry red colouration of medium intensity. It has an elegant and subtle nose of black fruits such as plum and redcurrants, with well-integrated spicy notes. It has a smooth well-balanced palate, of medium structure with outstanding, but well integrated, acidity and sweet polished tannins. Serving temperature: 16ºC-18ºC.
