Vineyard:
Made exclusively from grapes harveted from the "Pazo Baión” vineyard in the Salnes Valley. Vines older than 40 years. Training system: Pergola. Soil type: sandy

Harvest:
Exhaustive ripening control to determine the optimum time for harvesting.
Picked by hand in 20 kg standard plastic crates, to avoid alterations in fruit quality.

Alcoholic Fermentation:
The best grapes are selected and sorted both in vineyard and cellar.
Free-run juices obtained after de-stemming and pressing the grapes. Juices are settled for 36 hours at a cold temperature to rack it of their gross lees.

Starter: wild yeasts
Time: 10 days approx.
Temperature: 15-17ºC
Malolactic Fermentation: Partial (15%)
In stainless-steel tanks, on the lees, until being bottle in March, 2011
Total acidity: 6.0 g tartaric acid/L
Analytical Data:
Sugar: 4.0 g/L
Alcohol content: 13 % v/v

Tasting Notes: Floral and citrus nose with a silky and persistent taste. Noted for its intense perfume which is dominated by varietal florals (orange blossom and jasmine) with hints of citrus and tropical notes. On the palate, silky and elegant, it displays its strong aromatic finesse without losing the taste. Young, fresh, minerally and enveloping.
