Fermentation: 10 days with selected yeast (Saccharomyces bayanus). Fermentation temperature controlled between 28 and 30º C. Controlled micro-oxygenation. Two pump-over’s daily
Maceration: Cold maceration, without fermentation for 24 hours. Two pump-over’s daily during fermentation to maximize extraction. Post fermentative maceration for 8 days. Gentle extraction, one light pump-over daily.
Stabilization: cold stabilized
Tasting Notes: Color: Ruby red with violet hues, clean and very brilliant. Aroma: Fruity, raspberry, red fruits; very characteristic of the variety. Light notes of toast and spice. In mouth: medium-bodied, good equilibrium of tannins and acidity. Finishing with notes of raspberry, toast and light notes of wood.
Aging: 3 months in seasoned American oak.
Presentation: Bottle: Traditional Bordelaise, 750 ml, green with U.V. filter. Cork: Supreme Cork or Screwcap Label and back-label: Recyclable paper printed with ecological ink (without heavy metals)

Recommendations: Conservation: constant temperatures lower than 16º C (61º F); humidity at 80%. Dark storage. Consumption: Temperature of service: 15º C (59º F). Recommended pairings: Appetizers, rice and pastas, grilled meats. Meals not highly seasoned.
