AOC Coteaux Du Languedoc Grapes Grenache 30%, Syrah 40%, Mourvèdre 30%. Vineyard Situated at an altitude of 350 metres on hilly land facing north-west, the soil consists of fine grained colluvium soil with lacustrine deposits. It is on the site of an old lake formed after the eruption of a volcano whose crater is at the bottom of the Jouncas valley. The resulting soil is a geological phenomenon consisting of a mixture of limestone and basalt. Vinification The grapes are picked three weeks later than those in the village. No effort is spared to make a great red wine which is at the same time balanced and delicate. Long maceration with regular circulation of the lees in open vats. Maceration with lees circulation. Aged for15 months in vats and barrels. Tasting Notes Thanks to the altitude and exposure to the elements which slow the ripening of the grapes, this wine is beautifully fresh with aromas of red fruit, spice and all the wild plants of the garrigue. Serving Suggestion This wines fruitiness combined with its softness and length make it an ideal aperitif drink. But it would be equally delicious with partridge, duck or pigeon garnished with ceps or wild mushrooms - think duck breast with figs.
