D.O. Calatayud Grapes: 100% Garnacha (Grenache) Climate/ Soil type: Continental climate (dry summers and cold winters). Chalky and stony soil. Mountainous area with altitudes from 700 to 900 m. Vineyard details: Vineyards on schiste between 35-45 years old in gobelet training system with natural drainage and an average yield of 4000 kg/h. Fermentation Details: In stainless steel tanks for 20 to 25 days at a temperature of 24 ºC with skins. Premaceration for 10 days and posmaceration of 21 days with skins. Microxigenation before the malolactic fermentation. Maturation Process / Time: In stainless steel tanks for 4 months. Ageing in barrels: 30% of the total blend spent 6 months in American and French barrels Tasting Notes: Deep ruby colored with a gorgeous nose. Attractive aromas of kirsch, raspberries, pepper and melted liquorice. Full flavored wine with a supple texture and no hard edges. Medium to full bodied, fruit driven sumptuously-textured and a great length. Pairing: Various roast dishes, Spanish stew, mushrooms and grilled meats. Blue fish, rice, short- and medium-cured cheeses. Storage/Serving Temperature: 18º C
